Flip Bistro's Founder Sahil Sachdev congratulated the winners of the Menu Planning Contest and welcomed all other members present that day.

The Chef Mahender at Flip who did the demo for us has very rich cooking experience…I really mean it when I say rich….he's cooked in various restaurants at 5 star hotels in Delhi…. He shared lots of cooking secrets & was very enthusiastic about sharing his skills with the moms…The moms were all floored by his alacrity to share information which he has gathered over the years….Three cheers to him!!! 

He shared his 7 secret recipes with us to try it ourselves for a perfect Italian meal…read below for the yummy secrets……..we all loved it…..

 

1. Cream of Mushroom Soup

  1. Boil water in a pan
  2. Add onion, mushroom, celery, Leek, Bay leaves, cut vegetables (carrot, beans, cauliflower) to the boil water
  3. Mix Maida and butter
  4. Add the Maida mix to the boiling water
  5. Strainer/ sieve the mix in another pan and heat
  6. Add butter, finely chopped mushroom, cream, salt and white pepper
  7. Garnish with cream and serve hot

 

2. Tomato & Basil Bruschetta

  1. Slice garlic bread into even slices and toast/ roast it
  2. Deseed the tomatoes and cut them into small pieces
  3. Add olive oil, fresh basil leaves (not chopped), oregano, chili flakes, salt, pepper, to tomatoes and mix them in a bowl
  4. Brush garlic butter on the bread toast
  5. Put the tomato mix on the bread toast and serve

 

3. Lemon Mojito

  1. Take a glass and put some cut lemon pieces in it
  2. Add fresh mint leaves and some brown sugar in it
  3. Crush it in the glass
  4. Add half glass full of sprite and half soda
  5. Add crushed ice and serve

4. Lemon Greek Salad

  1. For the dressing
    1. Take some olive oil in a bowl
    2. Add white pepper
    3. Mustard sauce
    4. Salt,
    5. Feta cheese
    6. Lemon
    7. Mix all well and dressing is ready
  2. Take green lettuce and iced lettuce and toss them in the dressing
  3. Place the lettuce on a salad tray
  4. Take diced bell pepper, capsicum, tomato, and cucumber, and toss them in the dressing
  5. Pour the vegeies over the lettuce leaves
  6. Add some processed cheese and feta cheese to garnish and serve

 

5. Pasta in White sauce

  1. Boil pasta a keep aside
  2. For the white sauce
    1. Boil milk in  a pan
    2. Add bay leaf, laung, onion, in the milk
    3. Add butter and maida mix to the milk and boil a little more
    4. Strainer/ sieve the mix and white sauce is ready
  3. Take olive oil in a pan
  4. Add very finely chopped garlic
  5. Fresh Basil leaves finely chopped
  6. Add half boiled Vegetable (diced not finely chopped) like broccoli, Zucchini, beans, carrot, cauliflower)
  7. Add white sauce and cook
  8. Add mozzarella cheese
  9. Add White pepper, salt
  10. Add boiled pasta
  11. Ad parmesan cheese
  12. Cream
  13. Garnish with chopped parsley and serve hot

 

6. Pasta in Red sauce

  1. Boil pasta a keep aside
  2. For the red  sauce
    1. Put 4 cuts on a tomato and take 4-5 of them and boil them
    2. Peel the tomatoes and deseed them and make a puree
    3. Heat olive oil in a pan
    4. Add oregano, garlic, leek, clerery all finely chopped
    5. Roast all the above for 2 mins
    6. Add the tomato puree and cook until all water is dried
    7. Red  sauce is ready
  3. Take olive oil in a pan
  4. Add very finely chopped garlic
  5. Fresh oregano and Fresh Basil leaves finely chopped
  6. Add half boiled Vegetable (diced not finely chopped) like broccoli, Zucchini, beans, carrot, cauliflower)
  7. Add red  sauce and cook
  8. Add mozzarella cheese
  9. Add White pepper, salt, chili flakes
  10. Ad parmesan cheese
  11. Cream
  12. Add boiled pasta
  13. Garnish with chopped parsley and serve hot

 

7. Veg Lasagna

  1. Take 5-6 lasagna sheets and boil them in water at low heat (5-6 mins). Add some oil to the boiling water as well
  2. Boil spinach and cut is finely
  3. Boil  Vegetables like broccoli, Zucchini, beans, carrot, cauliflower and then chop them finley
  4. Cut capsicum and bell pepper and keep aside
  5. Take a serving dish, and spread white sauce at the bottom
  6. Lay 2-3 boiled lasagna sheets in the dish
  7. For the mix-1st layer
    1. Heat olive oil in a pan
    2. Add very finely chopped garlic
    3. Fresh oregano and Fresh Basil leaves, leek, celery, finely chopped
    4. Add boiled and chopped spinach
    5. Roast for a while
    6. Add bell pepper and capsicum
    7. Add vegetables (whatever you prefer boiled and chopped)
    8. Add red  sauce and cook
    9. Add mozzarella cheese
    10. Add White pepper, salt
    11. Add parmesan cheese
    12. Pour the mix in dish with laid lasgna sheets
    13. Cover with 2-3 lasagna sheets
  8. For the topping-2nd layer:
    1. Heat olive oil in a pan
    2. Add very finely chopped garlic
    3. Fresh oregano and Fresh Basil leaves, leek, celery, finely chopped
    4. Roast for a while
    5. Add bell pepper and capsicum
    6. Add vegetables (whatever you prefer boiled and chopped)
    7. Add white  sauce and cook
    8. Add mozzarella cheese
    9. Add White pepper, salt
    10. Add parmesan cheese
    11. Pour on the lasagna
    12. Cover with 2-3 lasagna sheets
  9. Pour some white sauce on the lasagna
  10. Garnish with mozzarella cheese
  11. Bake till the cheese become brown (approx 15 mins at 180 degree C)
  12. For the sauce at the top
    1. Heat olive oil in a pan
    2. Add garlic, leek , celery, red & white sauce
    3. Add basil leaves, salt, white pepper, parmesan cheese and cream
    4. Pour this sauce on the lasagna and serve hot
