Sanjeeta Datta’s Omelette Tenga

 
Sanjeeta Datta: Today I’d like to talk about one of my favourite dishes at home – omelette’or tenga (omelette in tangy tomato curry) is an Assamese dish that is perfect to beat the heat.Quintessentially tenga is made with fish, but my mother loved to make it with omelette and this is a childhood memory that I can’t have enough of .

It’s a dish that is uncomplicated, easy, one that tastes delicious and not to forget that it takes me home to my mama  (now that she’s no more) and the innumerable times that this was rustled up with so much love at home 

 
Recipe:
Omelette Tenga-Tangy Omelette curry 
  • Slice 5 tomatoes and 1 potato.
  • In a pan, heat oil and then add some methi seeds. Let it splutter.
  • Then add the chopped potatoes, saute for sometime
  • When half cooked add the tomatoes, haldi, salt, 2 green chillies slit up, and cook on low flame till mushy.
  • Once it’s cooked properly, add hot water and bring to a boil.
  • Then let it simmer for a few minutes more for the gravy to thicken slightly.
  • Add water according to the consistency you’d like.
  • In a separate pan, cook an omelette (don’t add any onions etc… just plain salt) and cut it into long broad strips.
  • Add the pieces of omelette into the tomato curry and cook for 2-3 mins.
  • Add some lemon juice and garnish with chopped coriander and chillies.

My daughter is forever craving something spicy. This delectable Masala Paniyaram recipe, a delightful twist on your regular idli-dosa batter snacks is her favourite that she loves taking to school and otherwise.
 
Here’s how you can turn simple ingredients into an explosion of flavors:
 
**Prepare Paniyaram:**
Heat up your paniyaram pan and pour in the idli-dosa batter into each mold, cooking them till they’re crisp and golden.
 
**Make the Tadka:**
  • In a pan, splutter mustard seeds and curry leaves.
  • Add finely chopped onions and sauté until golden.
  • Mix in juicy tomatoes, salt, red chili powder, and turmeric for that golden touch.
  • Don’t forget the secret ingredient – a generous sprinkle of Maggi Masala-ae-Magic to elevate the zest!
 **Combine:** Toss the crispy paniyaram in this savory masala and coat them well.
Serve these tantalizing Masala Paniyaram hot and watch them disappear in minutes! Perfect for any day when you need a little spice to perk up your spirits.

Sonam Ahuja: This is just me dressed up for nothing when I am “home alone” (for the first time in a million years). 
Not proud to say that I hesitated so many times to post this one that I started wondering “why?”. Being a millennial I used to post like a 100 useless photos in the same pose with my friends on Facebook 15 years back. And I never thought twice. What changed? I recently made a promise to myself that I will do more and think less about doing what I like, so here I am. Older, but hopefully wiser and hotter!
