Shefali Saxena’s Chicken Pulao

 
This easy recipe was my FILs who was a superb cook. His recipes were Lahore food (as he and his family had moved to Delhi after partition) and he made mostly mutton including an exceptional mutton pulao. If some chicken eaters were there he would adapt it to this chicken pulao. 
 
My daughter was very young when we lost him but now his Chicken pulao is her favorite meal and the only one she’s keen to learn before goes abroad for her future studies.
 
So here is our family’s Chicken pulao.
 
Ingredients:
  • 500-600 gms chicken (preferable leg/thigh pieces)
  • Marinate chicken in 1 tbsp ginger-garlic paste, 2-3 tbsp thick dahi, salt, chilli, chicken/garam masala, half lemon juice for 30 mins to 2 hrs.
  • Fried onions for garnishing – Slice 1 big onion and deep fry in oil/ghee and drain on a paper towel.
  • 1.5 katori basmati rice – soaked for half hour.
  • Whole masalas – 2 Big cardamom, 3 green cardamom, 2 bay leaves, 1 stick cinnamon, 5-6 cloves, whole pepper
  • 1 tbsp ginger garlic paste
  • 2 tbsp ghee
  • Some ginger slivers
  • 2 big onions – sliced
  • 2 green chilli – slit (optional)
  • Half lemon juice
  • Garam masala/Chicken masala
  • Chilli powder, salt – to taste
  • Mint, fried onions – to garnish
  • 2 potatoes peeled & poked with a fork (optional, not in original recipe, I added as I love potatoes!)
Method:
  • In a karahi, heat the ghee, put the whole masalas, then put the onions and saute the onions till browned (no need to crisp them fully). Then add ginger garlic paste, marinated chicken, potatoes(if using), fry till chicken is browned.
  • Add the garam/chicken masala, salt, chilli powder, rice, lemon juice, ginger slivers, green chilli and 2 cups water(sometimes I add chicken stock instead of water if have it, it tastes way better, be careful about adding salt then if stock has salt).
  • Let it come to one boil, and then cover and cook on low flame till rice done. Garnish with coriander/mint, top with fried onions.
 
Durba Ray’s Grilled Chicken in Mushroom Cream Sauce
 
 
Here’sone of my most favourite dishes which my Mom used to make for me when I was a teenager fixated on continental food. 
 
Ingredients:
  • 1/2 Kg chicken breasts, thinly sliced
  • 5 tablespoons butter
  • 1 teaspoon fresh lemon juice
  • Salt to taste
  • Freshly ground black pepper
  • Paprika powder
  • 3-4 tsp Worcestershire sauce
  • 1 cup sliced mushrooms
  • 1/4 cup chicken broth
  • 1 cup whipping cream
  • Chilli flakes for garnishing
Method: 
  • Marinate the chicken breast with paprika powder and set aside for 30 minutes.
  • Heat a large skillet over medium heat. Add 3 tablespoons of butter; allow to melt. Place the chicken breasts in a single layer and sprinkle with lemon juice, salt and pepper. Brown on each side for 3-4 minutes. Transfer to a plate and set aside.
  • Add the remaining 2 tablespoons of butter to the same pan and let it sizzle. Add mushrooms and sprinkle with salt and Worcestershire sauce. Cook, stirring occasionally till the mushrooms caramelize nicely.
  • Now pour in chicken broth, scraping up any brown bits from the bottom of the pan. Bring to a boil and reduce the flame.
  • Let the sauce cook for 2-3 minutes, stirring occasionally. Next fold in the cream and let the sauce simmer on a low flame until thickened to desired consistency (about 3-4 minutes).
  • Add the chicken breasts to the pan, turning them to coat well in the sauce. Cook on low until chicken is done through. Garnish with chilli flakes. Serve warm with oven roasted potatoes and salad.

Shefali Naidu: I remember being 16 and asking my mother if I could get an off shoulder/tube dress for my birthday. Was turned down gently with reasons that I couldn’t refute. Years passed and during a recent trip to Goa, while shopping, I spotted this tube dress and I thought I finally owe this to my 16 year old self. Wore it for a pre valentine’s dinner with husband and it was overwhelming. Over 20 years of wait was definitely worth it!
