Tea, they say is a smile booster and also builds your immune system. It contains antioxidants such as polyphenols which have anti-inflammatory and anti-carcinogenic properties. Adding milk to the tea means adding essential nutrients like calcium, potassium, and Vitamin B12.

Tea has always been an integral part of my stories and pictures because tea is the nectar of my life. My day begins and ends with a cup of tea and countless cups in the day. I usually take brewed tea with just a dash of milk but today I want to share a recipe that always makes me nostalgic Being from hills, tea was essential to keep us warm. My mother used to make special tea ..the aroma of that steam gushing out of the tea pan is fresh in my mind still ..whenever I make that tea at home -kids call it Nani Wali chai

Ingredients

  • Cardamom - 2
  • Ginger-a small piece
  • Tej patta/ bay leaves -2pc
  • Saunf-1tsp
  • Jaggery-per taste 
  • Tea leaves
  • Milk 

Instructions

  1. Take water in a pan, add these crushed ingredients along with tej patta to the water and lower the flame.
  2. Let the ingredients leave their flavours to the optimum in the water
  3. Now add tea leaves.
  4. Let it brew
  5. Add milk and brink it to boil till done.

Ingredients

  • Tea Leaves 
  • 1 tsp Marwari Chai Masala-cardamom , dried ginger , cloves and pepper 
  •  1 Cup of Milk 
  • Sugar as per taste 

Instructions

    1. Boil 1 cup of water 
    2. Add a tsp of Marwari chai masala. Marwari chai Masala is our homemade chai masala which consists of cardamom, dried ginger, cloves, and pepper.
    3. Add tea leaves..Boil for a minute on sim gas.
    4. Add milk
    5. Add sugar as per taste.
    6. Boil for 4-5 minutes until bubbles start to rise on sim gas.
    7. When the tea colour changes to brown,add a pinch of chai masala again and bring it to a boil.
    8. Strain the tea, and it is now ready to be served.

I love ‘Chai’ anywhere anytime !! My love for Tata Tea Gold, started when I once had Tea at My Nani’s House - & I could make out the difference ...between this and any other Tea(that I would have had in the past)

Immediately  - I asked Nani ‘Nani , aapne kaun sii Chai Patti use kee hai’

And she replied - Tata Tea Gold!!... And since that day,  Tata Tea Gold is my first choice  (at home, & wherever possible )--A True ‘Chai Lover’

Ingredients

  • Milk -1 part
  • Water-2 parts
  • Crushed cardamom
  • Crushed Ginger 
  • Powdered Saunf (fennel seeds)

Instructions

          1. Pour water into a pan, place it on the gas burner.
          2. Add crushed cardamom- make sure it’s crushed nicely to get the perfect aroma and taste.
          3. Add Crushed Ginger & Powdered Saunf.  
          4. Let it boil for about 2-3 minutes till the colour changes.
          5. Then add milk
          6. Let it come to a boil, sim the Gas and then I add ‘Tea Leaves’ about 3-4 teaspoonful
          7. Simmer a bit and then strain & serve

Cold, dismal winter mornings are incomplete without our favourite cuppa. My husband is a Darjeeling tea afficionado while I swear by my ‘ek cup kora cha’. After so many years, we had to agree on some sort of brew that satisfied both our tea cravings and our souls. So here is our morning-ritual tea recipe to kickstart our day:

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • Water-2 cups
  • Tea leaves - 2 tsps 
  • 1/4th tsp of Darjeeling tea leaves.
  • 3-4 tsps of milk 
  • Brown Sugar to taste 

Instructions

    1. Heat 2 cups of water to boil in a saucepan.
    2. When water is just about to boil, I lower the flame and add 2 teaspoons of tea leaves.
    3. Bring it to a boil, but make sure it is not over boiled.
    4. Switch off the flame.
    5. Add a quarter teaspoon of Darjeeling tea leaves.
    6. Cover the saucepan and let it steep for about 1 minute.
    7. Give it a slight stir and sieve into the cup.
    8. Stir in brown sugar, and 3-4 teaspoons of milk (we use Nestle Everyday dairy whitener) to taste.

Notes

I like my tea sweet and ‘kadak’ so I take 1and ½ teaspoons sugar and pour my tea last.
He prefers it slightly less sweet so just ¾ teaspoon sugar for him and pour first. And like
any true-blue Bengali, my tea rituals are always the quintessential dip-n-drink with
Marie.
The smooth finesse and bounce of the Tata Tea Fine Darjeeling leaf is superbly complemented by the rich, full-bodied flavour of the long-leave Assam. So there, we have our ‘kadak chai’ with a smooth finish that lingers long after the cups are empty. It totally warms our hearts and that’s why I call it our cups of PositiviTEA!

There are many people who start their morning with a cup of kadak chai (strong tea). It is a tradition, a culture to have tea first thing in the morning in most of the houses.

Freshly grounded masala tastes the best so I try to make it so that it lasts for a few weeks..once it finishes I make it again

Ingredients

  • Water - 1part 
  • Milk-2 parts 
  • Tea leaves -1 tsp 
  • Chai Masala -1/4 tsp (powdered Sauth,Kali mirch,Laung,Javitri,Ellaichi,Dalchini and grated Jaiphal)
  • 1/2tsp sugar
  • Grated ginger 

Instructions

    1. Heat one part water to two parts milk.
    2. Bring water, milk and Grated Adrak,chai masala to a simmer in a small saucepan on the stove
    3. Reduce heat and add tea leaves
    4. Wait for the tea to steep
    5. Stir sugar into your chai and sweeten to taste.
    6. Strain the warm spiced mixture into a mug; this will hold back the whole spices and tea leaves

Sau meel ki chai by Upasana Mahtani Luthra

So I went to a tea restaurant and saw this on their menu - it is said it is this tea which is required by truck drivers to drive sau meel (100 miles) . It is brewed tea with cinnamon and cloves .I additionally add small elaichi, black pepper and ginger. Tulsi leaves if handy

Instructions

    1. Mix 1 cup milk and ¾ cup water
    2. Add pounded (in a mortar and pestle) cinnamon and cloves.
    3. Once the milk boils, reduce the flame to simmer.
    4. Add tea leaves( I love TTG for the amazing aroma and flavour it brings)
    5. When the colour is deep, strain and serve.
    6. I love this with a teaspoon of honey
